At InterContinental Melbourne The Rialto, our commitment to exceptional dining begins with ingredients of the highest quality — grown right here in our restaurant. In partnership with Greenspace, we have introduced a state-of-the-art microfarm inside Alluvial, providing fresh, hyper-local herbs and microgreens for our restaurants, bar and in-room dining.
Just metres from the kitchen, the microfarm allows our chefs to harvest premium ingredients at their peak. From vibrant to aromatic herbs, every herb is grown in a controlled, sustainable environment designed to maximise flavour and minimise waste. The result is a dining experience that is as fresh as it is conscious.
Our Greenspace microfarm supports:
Alluvial’s seasonal à la carte menu and signature dishes
Craft cocktails at Bluestone Wine Lounge
Afternoon Tea selections
Hotel-wide garnish and ingredient requirements
By eliminating transport emissions and reducing packaging waste, the microfarm forms a key part of our sustainability journey, aligning with our long-term environmental commitments while enhancing every dish we serve.
Guests are invited to view the microfarm within Alluvial and experience the difference that truly fresh, locally grown produce makes.
Greenspace transforms underused urban spaces into living indoor farms that grow fresh, nutritious produce right inside the city. By keeping food close to where it’s eaten, wasteful transport is cut, emissions are reduced and greens that stay alive and full of flavour until harvest are delivered.
Local: Grown in the heart of the city, reducing food miles and packaging.
Sustainable: No land clearing, no pesticides, and far less water and energy than traditional farming.
Nutritious: Living produce harvested at peak freshness for maximum flavour and nutrients.
The macrofarm is the engine of the Greenspace network — a high-efficiency indoor farm that grows produce using up to 95% less water and renewable energy. Once crops reach the perfect stage, they’re delivered by foot or electric vehicle to nearby Microfarms across the city. This system keeps production sustainable, local, and incredibly fresh.
Microfarms are personal indoor veggie gardens that are compact, automated vertical farms that keep the greens alive and thriving until they are harvested. They deliver nutrient-dense, pesticide-free produce right where people eat, shop, or gather, ensuring ultimate freshness and unbeatable flavour.
